Tofu Recipes
Mock Tuna Salad
| 1 ½ cup Garbanzo’s mashed | ½ cup Tofu Mayo |
| 1 cup tomato’s deseeded and chopped | ¼ cup green onion tops chopped |
| ½ cup onion diced fine | ¼ cup Nutritional Yeast |
| ½ cup celery chopped fine | 1 tab Soy Sauce |
| | ½ tsp kelp powder |
| | |
Mix and chill. Serve on open faced sandwiches with a garnish.
Bean Sausage
| 2 cups tofu or beans cooked and drained and mashed | 1/3 cup garbanzo eggs |
| 1 ½ cups bread crumbs | 2 tab Minor alternative seasoning mix |
| ½ cup onion diced | 1 ½ tsp sage |
| ½ cup water | |
Mash together well. Roll in cornflake crumbs and fry. Or you can shape and bake at 350 degrees for 30 minutes turn once about half way through.
Garbanzo Eggs
| 1 can garbanzo’s with liquid | |

Blend in blender till smooth.
1/3 cup = 1 egg for binder and flavor
Sorry the texture for anything other than loafs and patties will be stretching it very much.
Minor alternative seasoning mix
| 1 tab soy flour sifted |
| ½ tab nutritional yeast flakes |
| ½ tsp onion powder |
| 1 tab paprika |
| 2 tab soy sauce |
| 1 tsp sage |
Mix together and store till needed.
Meat without Bone Salad
| 1 package Mori-nu tofu Firm | 1 tsp lemon juice |
| 2 tsp golden nor powder | ½ tsp turmeric |
| 1 tsp honey | ¼ tsp sage |
| 1 tsp parsley | ¼ tsp sweet basil powder |
| | ¼ tsp paprika |
Mash together well and chill.
30 minutes before serving add the following:
4 tab onion diced
4 tab celery diced
Mix well and chill for 30 minutes.
VTA Chee Slices
| ¼ cup water | 2 tab lemon juice |
| ½ cup cashew peaces or bits | 2 tsp onion powder |
| 4 tab Emes gel | ½ tsp garlic powder |
| ½ cup tofu firm (water packed) | 2 tsp salt |
| 1 cup cooked white rice | |
| 3 tab nutritional yeast | |
Blend water cashews and tofu till smooth add rice and blend till smooth. Add Emes and the rest of the ingredients blend 1 minute till smooth scrape sides will as needed. Pour into an upside down cheese server lined with plastic wrap. Chill till solid and remove with the help of the plastic wrap slice.
VTA Yellow Chee Slices
| ¼ cup water | 2 tab lemon juice |
| ½ cup cashew peaces or bits | 2 tsp onion powder |
| 4 tab Emes gel | ½ tsp garlic powder |
| ½ cup tofu firm (water packed) | 2 tsp salt |
| 1 cup cooked white rice | 4 oz can tomato paste or pimentos drained |
| 3 tab nutritional yeast | |
Blend water cashews and tofu till smooth add rice and blend till smooth. Add Emes and the rest of the ingredients blend 1 minute till smooth scrape sides will as needed. Pour into an upside down cheese server lined with plastic wrap.
Chill till solid and remove with the help of the plastic wrap slice.
